    Despite having a higher carb content than most nuts, pistachios have a low glycemic index, meaning they don’t cause large blood sugar spikes.

Vegan Pistachio Pudding

Easy and delicious dessert!

  • Blender


  • 60 g pistachios unsalted
  • 1 tbsp agave syrup or maple syrup you can add more if you like it to be sweeter
  • 1/2 can coconut milk mix solid and liquid parts well before use
  • 1 tsp lemon juice
  • ½ tsp spirulina
  • tsp salt
  • grated chocolate for decoration (I used mint flavour)


  • Blend all pudding ingredients in a blender into a smooth consistency.
  • Once the mixture is smooth transfer it into a glass jar/bowl and place it in the fridge for 20-30minutes before serving.
  • Just before serving garnish it with grated chocolate and chopped pistachios. Enjoy!
