Irish Potato Farls

Equipment

  • Potatoe masher

Ingredients
  

  • 700 g potatoes
  • 1 tbsp vegan butter or ordinary butter if you are not on a vegan diet
  • 4 tbsp all purpose flour
  • 2 tsp baking powder
  • salt to taste
  • oil for frying

Instructions
 

  • Peel and chop the potatoes 
  • In a medium saucepan, boil potatoes until tender
  • Once tender, remove the potatoes and place them in a bowl, let them cool down slightly
  • Add 1 tablespoon of vegan or ordinary butter and using a potato masher, mash the potatoes
  • Add flour, baking powder and salt to taste and stir it all together
  • Separate the mashed potatoes into two equally sized round balls
  • Flatten the dough into approximately 1cm thick round discs 
  • Cut each disc into 4 quarters 
  • Heat up oil in a frying pan and very carefully place the 4 quarters of potato discs to the frying pan, fry over a medium heat until golden brown, flip them gently over and fry on the other side until golden brown.
  • Gently remove from the frying pan; once fried they will hold their shape 
  • Serve while still warm
