Welcome to my page!
My name is Gabriela and I’m the author and recipe maker behind Vegulicious.
As a Nutrition and Health Coach (graduated with BTEC Advanced Diploma in Nutrition & Health Coaching, QQI Award in Nutrition and Health – Level 6 Ireland from The Irish Institute of Nutrition and Health, IINH) and Forks over Knives certified in Plant-Based Cooking (from Forks over Knives Cooking School) I put my knowledge in practice by creating healthy and nutritious dishes.
I follow a whole food, plant-based lifestyle (WFPB). The term “whole” in WFPB describes foods that are minimally processed. I do have cheat days from time to time but I keep processed food and dairy food to a minimum.
Like many of you I love to eat … In 2016 I decided to go vegetarian and now I’m 90% whole food and plant-based. I don’t like to label myself vegan or vegetarian. I eat plant based almost all the time simply because its the healthiest diet and I prefer to eat that way, but if someone makes a pizza for me or offers me an ice cream – I will have it.
I create recipes for breakfast, lunch, dinner, some nice and yummy snacks and after eating all my veggies I will always find some room for lovely desserts…well Its all about balance, isn’t it?!
My experience in working as a Communications Executive and Project Manager and meeting all the incredible people along the way have inspired me to share my love of healthy food and my recipes and to create this blog.
